A modern Glasgow institution in the making

A new chapter in Glasgow hospitality begins this summer with the opening of Anderson’s, a reimagined traditional pub and cultural meeting place launching on 10 July 2026.

Located in the heart of the city amongst Glasgow’s oldest thoroughfares, Anderson’s takes inspiration from the great pubs that shaped Glasgow. Places full of warmth, wit, character and conversation and brings them into a new era. Drawing from the city’s rich hospitality heritage, Anderson’s aims to become a modern Glasgow institution in its own right.

At its core, Anderson’s is about exceptional comfort food without pretension. The kitchen will serve elevated versions of nostalgic Glasgow pub staples: familiar dishes made entirely from scratch with care, quality and personality.

Guests can expect dishes including Pie, Chips & Beans, Mince & Tatties, Ham, Egg & Chips, Haggis, Neeps & Tatties and Spag Bol, alongside playful takes on classics such as Crispy Pancakes with beef massaman filling, Smokie Fishcakes and Macaroni Pie made with Isle of Mull cheese.

Leading the kitchen is Merchant Pubs & Bar’s first-female Head Chef, Inesa Dirginciute, formerly Head Chef at Michelin-starred London restaurant Angler. Her approach combines serious culinary pedigree with a deep appreciation for the dishes people genuinely love to eat. The ambition is simple: to create good food while remaining rooted in the spirit of a proper Glasgow pub.

Upstairs, the Pub itself has been designed to feel welcoming, bright, cosy and inviting. Somewhere equally suited to a quick pint, a long lunch or a late evening with friends.

Below the pub sits the Institute, Anderson’s dedicated cultural and creative space. Inspired by the site’s historical roots and Glasgow’s long tradition of social clubs and gathering places, the Institute will host grassroots live music, podcast recording sessions, cultural events and creative collaborations.

Behind the bar, Anderson’s pursuit of quality extends to what could become the finest pint of Tennent’s in Glasgow. The venue will serve tank-fresh, unpasteurised Tennent’s delivered weekly by truck directly from the brewery. The beer arrives straight from source, Wellpark Brewery – a mere mile down the road, resulting in a fresher, fuller and more flavourful pint than most people have experienced before.

Alongside the signature Tennent’s offering, Anderson’s cocktail and drinks programme draws heavily on Glasgow nostalgia and culture, with creations including the Vimto Bramble, Barr Cola Lang Clyde and Tunnock’s Tea Cake Old Fashioned. Paired with an Anderson’s x Macallan partnership, Scottish tipples are top of the menu.

Art and design are central to the Anderson’s experience. The venue is working closely with celebrated local artists including Rogue One, Gerard Burns, Stuart Kerr and Ross Muir, whose work throughout the space draws inspiration from classic Glasgow pub culture and city life. Their pieces have been thoughtfully integrated into the interiors through elevated contemporary detailing and high-quality finishes, helping create a space that feels deeply rooted in Glasgow while distinctly modern. Guests will also be able to purchase selected artwork directly from the pub if desired.

The interiors, created by Stuco Design, pay tribute to Glasgow’s iconic pubs and the surrounding Saltmarket area while reimagining them for a contemporary audience. The design combines architectural salvage, stained glass features and restored original wood detailing uncovered from previous tenants, layered with thoughtful modern finishes to create a space that feels timeless rather than themed.

The name Anderson’s itself comes from a historical Glasgow tavern proprietor, Mrs Anderson, remembered in the late 19th century as “a most genial host” who was celebrated by patrons for her generous hospitality. That same spirit sits at the heart of the new venue today.

Courtney Flynn, Head of Sales, PR & Comms for Merchant Pubs & Bars, said:

“Glasgow has always had incredible pubs, places with real soul, personality and a sense of belonging. With Anderson’s, we wanted to create something that feels instantly familiar but genuinely exciting at the same time. It’s about celebrating Glasgow hospitality at its finest; exceptional food without pretension, brilliant drinks, live culture and warm service all under one roof. We truly believe Anderson’s has the potential to become a modern Glasgow institution.”

Inesa Dirginciute, Head Chef at Anderson’s, added:

“Moving to Glasgow to lead the kitchen at Anderson’s felt like an incredible opportunity to create something special. The menu is rooted in comfort and nostalgia, but every dish is approached with the same care and attention you would expect in a Michelin-starred kitchen. We’re taking the food people grew up loving and elevating it through technique, quality ingredients and flavour, while still keeping it approachable, fun and recognisably Glasgow.”

Stuart Kerr, Owner of Stuco Design said:

“Our inspiration came from the great old Glasgow pubs and the character that makes them feel so enduring. We wanted Anderson’s to capture that warmth and authenticity while elevating it through craftsmanship and thoughtful contemporary detailing. We’ve incorporated reclaimed architectural salvage, stained glass elements and restored original wood features discovered within the building, alongside references to the Saltmarket’s rich history and culture. The result is a space that feels deeply connected to Glasgow’s past but completely relevant for the city today.”

Anderson’s opens to the public on 10 July 2026.
